Oil content, lipid profiling and oxidative stability of “Sefri” Moroccan pomegranate (<i>Punica granatum</i> L.) seed oil

The aim of this study was to determine the chemical composition (fatty acids, tocopherols, and sterols) evaluate oxidative stability Moroccan pomegranate ( Punica granatum L.) seed oil. oil content 22.63 g/100g dry weight. fatty acid showed a dominance conjugated linolenic acids (CLnAs) (86.96 g/100g). most dominant punicic (75.1 g/100g), followed by catalpic (6.7 g/100g) linoleic with amounts 4.11 g/100g. only contained low level saturated palmitic (2.64 stearic (1.73 as main acids. sterol marker, ?-sitosterol, accounted for 404.59 mg/100g total in Total tocopherol 332.44 mg/100g. ?-tocopherol (190.47 oil) is major constituent, ?-tocopherol (74.62 ?-tocopherol (53.3 oil). induction time calculated Rancimat accelerated method found be 3.6 h at 120 °C. In terms oil, may considered valuable source new multipurpose products industrial, cosmetic pharmaceutical uses.
